Meet Your Mentors
Stephen Brooks
Founder of Punta Mona & Ecoversity. Designer of thriving regenerative communities across Costa Rica and beyond.
Stephen Brooks has been living for the past 25 years in Costa Rica and is a world leader in creating thriving ecological communities, promoting permaculture practices, and fostering sustainable food production models. He is the co-founder of Ecoversity and Punta Mona Center for Regenerative Design & Botanical Studies. Penny Livingston
Permaculture Elder & Global Educator. Four decades of teaching how humans and nature can co-create resilient systems.
Penny has been teaching internationally and working professionally in the land management, regenerative design and permaculture development fields for 30 years and has extensive experience in all phases of ecological design and construction using natural non-toxic building materials. She is a co-founder of the Regenerative Design Institute. She is also a certified instructor from the Permaculture Institute of North America and Permaculture Institute USA.
This course gave me the confidence to start my own permaculture design company. Since graduating, I’ve completed over 20 designs — from tiny balcony gardens to 12-acre homesteads.
- Joe, Class of 2025
The course didn’t just change how I grow food — it changed how I see everything. Water, waste, community… it’s all connected.
- Marion, Class of 2025
The community here is amazing — the people who come bring so much life experience. It’s like joining a living ecosystem of support.
